I know the name of this meal might sound a little funny, but trust me, the aesthetics and taste of this breakfast is out of this world!
So why is it called plantain boats?
I guess the name of this meal comes from the shape it gives after it’s preparation. You see, our beloved plantain is usually given a little incision to enable it carry minced meat goodness just as a boat would usually carry people to their destination. This plantain. paired with the minced meat deliciousness would most definitely give your taste buds some heavenly bliss! Let’s talk Ingredients and preparation.
INGREDIENTS
- 4 Ripe plantains {usually sweeter than unripe}
- 100g Minced meat
- 2 large Scotch bonnet peppers
- Vegetable oil for cooking {4 tbs }
- bell peppers : One medium green and one medium yellow pepper
- One medium sized onion
STEPS
- It’s best to make our minced meat filling first. Cut your bell peppers and onions into cute, smaller sizes. Glaze lightly with a pinch of salt.
- In a clean pan, add a little vegetable oil and your veggies, sauté lightly.
- Add in your tomato/onion paste and sauté for a few seconds more.
- Add in your minced meat and cook for about 10 mins.
- Don’t forget to add seasoning cubes for taste, as well as your other spices of choice {white pepper, chilli pepper, cayenne pepper and sweet chilli}
- Start by blending your yellow and scotch bonnet pepper into a rough paste, add a pinch of salt to the pepper mix
- With a pair of food gloves, rub your blended pepper mix all over the plantain and make an incision wide enough to accommodate your filling.
- Add a generous amount of your yummy minced meat filling and top it up with some cheese if available
- Place carefully in a baking dish your plantain boats and then transfer to an oven to cook on low to medium heat for 15 mins
