The thing about the frittata name in my household is that it seemed quite hilarious to my family members, the first day I mentioned it.
However, both the name and meals have stuck this far, because they are unique and absolutely delicious when made right.
Now for the frittata meal, you could either have it as a plantain or as a potato fritttata. The meal preps are the same, the only difference is that for the toppings on the egg, you could either use diced plantain or diced potatoes. Not to worry, you would understand what I mean in a little bit.
HISTORY OF FRITTATAS
The origin of Frittatas could be traced back to Italy. The word Frittata was actually derived from the italian word friggere, and it roughly means…..”fried”
A frittata is an egg dish that is usually made with meat, cheese, and vegetables. You can think of a frittata as an Italian omelette.
This meal has since then, spread its shores across borders and even made it to the culturally tight African shores where it is now being embraced.
How is it made? To answer this question, we have to commence with the ingredient list
INGREDIENTS
- 4 – 5 medium eggs
- Bell peppers, one small sized each { Red, Yellow and green}
- 2 small tomatoes
- 2 Scotch bonnet pepper
- Half of an Onion bulb
- 2-3 medium sized Plantain/ potato {could be sweet or Irish}
- 100g Minced meat {optional}
- Bouillion cubes (as much as preferred)
- Spices {Cayenne pepper, Paprika} 1tsp each
- Parsley flakes (1tsp)
- Sweet chilli pepper (1 tsp)
- 3-4 table spoons of Oil for cooking
STEPS
- We start by preparing our veggies i.e slice/dice your onions, green, red and yellow bell peppers.
- Glaze your veggies with some salt and Sauté lightly on low heat in a pan, not forgetting to add your spices and a little sweet chilli to the mix
- After sautéing, set aside
- Dice either your plantain or potato, {whichever you have chosen to tho with} and set aside.
- In a clean bowl, break your eggs, add the appropriate amount of bouillion cubes, and a little more of your pepper spices, then pour in your sautéed mix and some cooked minced meat if available (Please don’t put raw minced meat in there o}
- Stir everything together
- In a baking dish or frying pan, pour in your egg mix and then start to arrange the diced plantain/potatoes all round
- You could add in some cheese if you so desire
- Cook on low heat for about 5-8 minutes till the egg is properly cooked inside out
- Cut into desired shape with a pizza cutter, and serve to the delight of your taste buds.
